For the past couple of days, conversations have been centered around the fact that Hurricane Irene is coming. While my family did the usual preparations, like stocking up on water bottles and relocating our pool furniture (which is now taking up a large portion of our first floor), I did some preparations of my own.
I had to ensure that I had the essentials—plenty of reading material and healthy snacks. I’m also anticipating that we will lose our power, so I’m using up every bit of technology and electricity right now. I may or may not stay on the treadmill until it turns off.
Natalie also had the brilliant idea to hard-boil some eggs—you know I can’t live without eggs for more than a day. That would be crazy. Don’t worry, I’m also going to make a protein shake pretty soon. I go to extreme measures for those, too.
Along with the necessities, my sisters picked up the ingredients for s’mores. Because you obviously can’t be stuck inside without s’mores while it’s torrentially raining.
And if you’re lucky enough to have electricity this weekend, I highly suggest making a fruit pizza. Sally Anne, this recipe is for you!
- One package of Pillsbury Create ‘n Bake sugar cookie refrigerated dough
- 8oz light cream cheese, softened
- 8oz light Cool Whip, thawed in refrigerator
- 1/4 cup powdered sugar
- Fruit of your choice (berries, kiwis, and mandarin oranges work best)
1. Preheat the oven to 350°.
2. Shape the refrigerated dough into a large circle (individual cookies will work too) on a sprayed pizza pan to form a cookie “crust.”
3. Bake crust in the oven for about 15 minutes, or until it is golden brown.
4. In a large bowl, beat together the softened cream cheese, Cool Whip, and powdered sugar. It should have a smooth, but thick consistency.
5. Allow the cookie crust to cool then spread cream cheese mixture on top. Decorate with fruit as desired.
**Cream cheese mixture will be lumpy if the cream cheese is not brought to room temperature and if the Cool Whip is thawed improperly. Allow Cool Whip to thaw in refrigerator for up to three hours.
Hopefully yours won’t come out lopsided. Either way, it will still taste delicious. And now I really want a piece. Anyone on the west coast want to make a dessert then send it to me? No? Fine.
