Thankfully, today wasn’t quite as crazy as yesterday. Given the nature of my lifestyle and job, my schedule literally changes hour by hour. It’s nice because I have flexibility in my day, but can be overwhelming since it requires a lot of coordinating on my end.
I was home relatively early tonight, so I thought I would make dinner. It was just me and my dad, as my mom and Ali are still at the beach, Brian is on a mission trip, and Natalie is babysitting late. I couldn’t decide what to prepare, and it didn’t help that my dad had no preference.
When I spotted some avocados in the fridge, the decision came easily. Tacos it was! I really don’t like using the pre-packaged taco seasoning as it is high in sodium and includes some unpronounceable ingredients. Instead, I combined a few spices to create a seasoning of my own.
My grumbling stomach couldn’t wait for dinner and after craving a smoothie all day, I had to whirl up the blender while cooking. I made the same exact smoothie as yesterday, a chocolate covered banana protein shake. Seriously, make this shake now. It is so good!
Even though I was full, I still couldn’t resist having a taco, especially since I knew I’d be hungry again before going to bed. Plus, I had to see how my seasonings turned out. To be completely honest, the flavoring was great, but it was spicy! My dad loved the added kick while I kept a large glass of water close by.
I topped my taco with homemade guacamole and a dollop of Daisy plain Greek yogurt. I’d definitely make this again!
Spicy Chili Pepper Tacos
- 1lb 95% lean ground beef
- 2/3 cup water
- 1/8 teaspoon onion powder
- 1/8 teaspoon garlic powder
- 1/8 teaspoon ground red pepper
- 1/8 teaspoon pepper
- 1/8 teaspoon salt
- ¼ teaspoon chili powder
- ¼ teaspoon oregano
1. In a large skillet, brown the ground beef then drain the fat. If you are using 95% lean ground beef, there will be very minimal fat.
2. Combine all of the spices in a small bowl and add them to the ground beef. Add the water then cover the skillet with a lid.
3. Allow the ground beef to simmer for five minutes.
Time to catch up with my dad–he’s making me watch America’s Got Talent–then I’m off to bed!
